With a heat wave in Kelowna we are all looking for ways to cool off…... Peach Sangria Popsicles are fun and easy to make for the adults!  They are also great if you are looking for a unique adult only dessert after a BBQ around the swimming pool.  These will be even better with all the fresh peaches out in the Okanagan!

There is a recipe for the kids down below!

Peach Sangria Popsicles

3  peaches      1 vanilla bean

1 bottle rose wine      1 cup sugar

1 extra peach cut very thin, for garnish      Fresh raspberries for garnish

Popsicle molds

~ Coarsely chop the 3 peaches and puree them in a blender or food processor.  Strain the puree into a large bowl, discarding any large bits.

~ Seed the vanilla bean, then place both the pod and the seeds in a saucepan, along with half of the wine and all of the sugar.  Gently warm the mixture over low heat, stirring constantly until the sugar is dissolved.  Strain the mixture into a bowl with the puree, discarding the vanilla pod.  Stir or whisk in the rest of the wine.

~ Place a few very thinly sliced pieces of peach, along with a few raspberries, into each popsicle mold.  Then pour the mixture into each mold.  Place a wooden popsicle stick in.  Freeze till solid, about 3 to 4 hours.  Remove the popsicles from the molds when ready to serve.  Enjoy!

Now for the kids!  This peach popsicle is something my family use to make and are a big hit!

6 peaches      1/4 cup water      raspberries

Add sugar to taste.  If the peaches are really sweet I don’t add the sugar.

In a blender add the peaches, water and sugar.   Add a few whole raspberries to the mixture.  Pour into your popsicle molds.  Freeze and enjoy!
