Easy BBQ For Around The Pool and Hot Tub

 

 

Who doesn’t love a BBQ; especially after a day around your hot tub and swimming pool.  

 

I tested out these recipes last weekend: they were very good and easy to make, I thought I would share!

 

I did a Salmon with Brown Sugar and Mustard Glaze which is a recipe of Bobby Flay's.

Also Grilled Corn on the Cob with Chili Lime Butter and Cotija Cheese.  Recipe of Marc Murphy’s

 

Ingredients

 

3 tablespoons light brown sugar

1 tablespoon of honey

2 tablespoon of butter

¼ cup Dijon mustard

2 tablespoons soy sauce

2 tablespoons olive oil

1 tablespoon grated ginger

Vegetable oil

Salt and freshly ground pepper

8 - 6 ounce salmon fillets

 

Directions

 

On the side burner of your BBQ, (or use your stove for this part) melt the brown sugar, honey and butter in a small pan and saute over medium high heat.  Remove from the heat and whisk in the mustard, soy sauce, olive oil and ginger.  Let this cool.

Preheat your grill to medium heat.  Brush the salmon with vegetable oil and season with salt and pepper to taste.  Place the salmon skin side down on the grill.  Coat the flesh of the salmon fillets with the brown sugar mixture.  Grill for 6 to 8 minutes to medium doneness, turning one after 5 to 6 minutes.

 

Grilled Corn on the Cob with Chili Lime Butter and Cotija Cheese

 

6 corns still in their husks

1 cup unsalted butter at room temperature

1 tablespoon chili powder

1 teaspoon cayenne pepper

Juice of 3 limes

 

Heat a grill to medium high heat.  Grill the corn in their husks until the husks start to blacken, about 3 minutes per side.

 

Mix together the butter, chilli powder, cayenne pepper, lime juice and some and black pepper in a bowl until incorporated.

 

Peel back the corn husks, leaving on the use as handles while eating.  Rub the chili lime butter all over the corn.  Garnish with the cotija cheese.  Add in a tossed salad and maybe a nice bottle of Okanagan wine and you're set.  So yummy!
