Easy Summer Cocktail and Appetizer To Enjoy By The Swimming Pool

 

 

Are having some guests over to relax and socialize by the swimming pool?  Not sure what to serve?  Below are some great recipes for a crowd pleasing cocktail and appetizer!


With living in Okanagan you can use some of the beautiful farm fresh ingredients that are grown right here for these recipes.

 

The cocktail below is simply delicious and sure to be hit when you are sitting around the swimming pool enjoying the beautiful views of Kelowna.

Basil Raspberry Mojito ( yields a pitcher, prep time 10 minutes )

 

1 cup simple syrup (¾ cup of sugar plus ¾ cup water, heated to dissolve)

1/2 cup torn basil leaves

1 cup FRESH key lime juice or regular limes for less acidity

2 cups white rum

½ cup Chambord (raspberry liquor)

1 liter of club soda

Ice

Fresh raspberries and lime slices for a garnish

 

Pour the cooled simple syrup into a large pitcher, and add the torn basil leaves.  Use a large spoon or ladle to muddle the basil leaves so they release their flavor.  Beat them up pretty well.

Add the lime juice, rum and Chambord.  Stir.  Add the club soda, stir, top with ice.

To serve:  Garnish each glass with fresh berries and lime slices.  Serve over ice or chilled without ice.  Recipe from a Spicy Perspective.

Avocado Salsa

 

1 - ⅔ cup corn      

2 cans sliced black olives drained

1 med. sweet red pepper chopped      

1 small onion chopped

5 garlic cloves minced      

⅓ cup olive oil

½ cup lemon juice      

3 tablespoons cider vinegar

1 teaspoon dried oregano      

½ teaspoon salt

½ teaspoon pepper

4 medium ripe avocado peeled

Tortilla chips

 

Combine the corn, olives, red pepper and onion.  In another bowl, mix the next 7 ingredients, Pour over corn mixture, toss to coat.  Refrigerate overnight.  Just before serving, chop the avocados, stir into the salsa.  Serve with tortilla chips.  Recipe from Taste of Home.
