Recipe Of The Week!

 

 

 

Warm up on a cold Winter's Day with this delicious Chicken Pot Pie.  It is so very easy to make and everyone loves it.  It is also good as leftovers so I generally make two of them at a time.  I almost enjoy the leftovers more!

 

Ingredients

 

1 pound of boneless, skinless chicken      1 cup of sliced carrots

 

1 cup of frozen or canned peas      ½ cup of sliced celery

 

⅓ cup butter      ⅓ cup chopped onion      ⅓ cup flour

 

½ teaspoon salt      ¼ teaspoon of black pepper

 

¼ teaspoon celery seed      1 ¾ cups chicken broth

 

⅔ cup of milk      2 9 inch unbaked pie crusts


 

Preheat your oven to 425 degrees F.

 

In a saucepan, combine the chicken, carrots, peas, and the celery.   Add water, cover and boil for 15 minutes.  Remove it from the heat and set it aside.

 

In the saucepan over medium heat, cook your onions in the butter until soft and translucent.  Stir in the flour, salt, pepper, and celery seed.  Slowly stir in the chicken broth and milk.  Simmer over medium-low heat until it is thick.  Remove from the heat and set aside.

 

Place the chicken mixture in the bottom pie crust.  Pour the hot liquid mixture over it.  Cover with the top pie crust, seal the edges, and cut away the excess dough.  Make several small slits in the top to allow steam to escape when your pie is cooking.

 

Bake in the preheated oven for 30 to 35 minutes or until the pastry is golden brown and the filling is bubbly.  Cool for 10 minutes before serving.
